ESSENTIAL PURPOSE: To oversee the management of the operations and administration of the Restaurant and Bar.

ESSENTIAL DUTIES:

  • To hire, train, schedule, support, review, discipline and terminate employees directly accountable to his/her position, to maintain highest possible levels of employee morale and department productivity.
  • To ensure consistent communication with the team via regularly scheduled staff meetings, safety tailgate, training and food, beverage and wine education.
  • To establish and maintain dining room policies and procedures, including service style, to ensure professional standards of restaurant operation.
  • To continually monitor service and quality standards as measured by Preferred Hotels, hotel food & beverage standards, guest correspondence and other mystery shopper programs.
  • To participate in the coordination of the restaurant marketing, public relations and advertising as delegated by Director of Food & Beverage.

JOB KNOWLEDGE & EDUCATIONAL LEVEL: A college degree in Accounting or its equivalent professional experience required. A minimum of two years work experience in Hotel Accounting or a related field. Moderate level of proficiency in Microsoft Word and Excel required.

POSITION TITLE: Spa Receptionist Supervisor

ESSENTIAL PURPOSE:

To schedule, supervise and motivate all spa reception team members. To be a liaison between spa receptionists and senior management, communicating issues that are relevant to the spa and hotel operation. To perform duties which enhance overall spa productivity and improve the overall level of service at the spa and pool areas.

ESSENTIAL DUTIES:

  • To schedule spa receptionists according to budgeted labor hours, and update schedule to adjust to seasonal and business demands.
  • To supervise daily operations, employee promptness, productivity and overall performance and coach and advise team members.
  • To conduct required performance reviews for spa reception team within 2 weeks of their due date.
  • To review and approve scheduled hours in E-Labor payroll management system.
  • To maintain all opening and closing checklists so they are current and appropriate to the operation.
  • To work with spa attendant supervisor to order all guest supplies.
  • To communicate all operating information to the spa reception team as disseminated by senior management.
  • To communicate all requests, concerns and information regarding guest service issues, scheduling concerns, team member concerns or equipment maintenance issues to senior management.
  • To train team members on procedures, product knowledge, and safety as specified by management.
  • To work with retail coordinator to provide product knowledge trainings with in house staff or outside vendors so that the reception team is thoroughly trained in all products and services offered in the spa.

ESSENTIAL PURPOSE: To facilitate seating and reservations for the restaurant, and to provide a gracious initial contact for arriving guest. To provide general supervision of the restaurant service staff to ensure service standards in the restaurant.

ESSENTIAL DUTIES:
  • To understand and respond to all guest needs and requests in a timely and professional manner, deferring to the Restaurant Manager when necessary, to ensure customer satisfaction.
  • To record covers, staffing, service flow and guest comments in log book, for each shift.
  • To provide prompt, efficient and gracious service, in person or over the telephone, including making restaurant reservations, greeting guests with salutations, seating guests as they arrive, providing menus, and responding to all requests for information regarding the restaurant and hotel.
  • To oversee and ensure continuity of service in the dining room, including assisting service staff, as necessary.
  • To ensure proper rotation of service stations when seating guests.
  • To ensure the cleanliness and good condition of all menus, check presenters and wine lists used during each shift.
  • To void or make changes to guest checks, as needed, to ensure customer satisfaction and correct procedures.

POSITION TITLE: Chef de Partie

ESSENTIAL PURPOSE:

Ensure the highest quality preparation and presentation in all TCI outlets, banquets, special parties and events.

ESSENTIAL DUTIES:
  • Basic Garde Manager.
  • Proficiency in knife and equipment skills.
  • Keep recipe cards exactly and assist in preparing new cards for specials or new menus.
  • Assist in periodic menu reviews and revisions
  • Preparations and handling of meat, fish, vegetables, starches, etc.
  • Learn and work both sides of the outlets and banquet stations.
  • Set up the mise en place for the station.
  • Set up buffet stations and perform carving, stir fry or other designated function at that station.
  • Direct the preparation of food upholding the highest standards of culinary quality.
  • Crate high quality daily specials before service.
  • Maintain schedules of soups and specials.
  • Help all other cooks and all other lines as needed, contributing to an environment of team work.
  • Help train new employees in their responsibilities, required knowledge, skills and organization in the kitchen.
  • Assist team leader in evaluating employees.
  • Assist performing month-end inventories.
  • Work with butcher to ensure consistent product, portions, cuts, amounts and inventory pars.
  • Help to prepare and submit daily requisitions.
JOB KNOWLEDGE & EDUCATIONAL LEVEL:

English fluency required. Spanish fluency helpful. Must have minimum two years prior hotel/kitchen experience, including one year supervisory experience. Familiar with OSHA, SB198, local Department of Health regulations, and relevant current laws governing handling of hazardous substances.

To provide personal, sincere customer service to Orchard guests, including greeting and orientating arriving guests; assisting guests to and from their cottages; picking up and delivering amenities, laundry, mail, parcels and other requested items; providing ice and giving directions. To manage all specified procedures in administering the affairs of the Bell department, including coordination of bag pull, transportation, parking vehicles, rooming guests, amenity deliveries, up selling, property explanation.

ESSENTIAL PURPOSE:

To serve food and beverages, as ordered, at banquet functions and to ensure guest satisfaction during all aspects of the function or meeting.

ESSENTIAL DUTIES:
  • To provide prompt, efficient, and gracious customer service to banquet functions guests, including serving cocktails during prescribed reception hours; handling cash bar transactions; serving all food and beverages during functions; and assisting to bus tables, as serving requires.
  • To make the Banquet Captain aware of all guest comments and complaints.
  • To ensure, as directed, with room set-up and breakdown, including setting and decorating tables; folding napkins; preparing condiments; filling salt, pepper, and sugar containers; and breaking down and storing tables and chairs.
  • To be completely familiar with prospectus sheet and menu for each banquet function, prior to service.
  • To understand and respond to all guest needs and requests in a timely manner, deferring to the Banquet Manager, Banquet Captain or Catering/Conference Service Manager when necessary, to ensure customer satisfaction.

To ensure proper set-up and break down of all Banquet functions.

ESSENTIAL DUTIES:
  • To understand and respond to all guest needs and requests in a timely and professional manner, deferring to the Lead House Person, Banquet Manager or Banquet Captain when necessary, to ensure customer satisfaction.
  • To make the Banquet Captain aware of all guest comments and complaints
  • To polish all silver coffee pots, chaffing dishes, water pitchers, etc.
  • To assist banquet staff, as directed, to bus tables, and set-up and replenish buffets.
  • To follow specified procedures to break down and clean meeting rooms, including trash removal.
  • To check all banquet rooms daily and to immediately report any maintenance problems to the Engineering Department.
  • To maintain the proper car and cleanliness of tableware and serving equipment, handling both to minimize breakage.
  • To set-up all meeting room accordingly to Banquet Event Orders and standards, including all audio-visual equipment, food, and beverages.

ESSENTIAL PURPOSE:

  • To provide cleanings services in, and ensure safety, order, and provision of assigned guest rooms guest rooms.
  • To perform deep cleaning tasks, as schedule and assigned.
  • To promptly report any deficiencies and maintenance needs in guest rooms.
  • To assist other room attendants, as directed, in completion of their work.
  • To maintain the cleanliness and order of the linen in the closets and promptly report any discrepancies or problems.
ESSENTIAL DUTIES:

  • To communicate all guest requests to an appropriate supervisor in a timely and professional manner.
  • To satisfactorily perform routine housekeeping task in guest rooms, including mopping, dusting, and straightening, cleaning and disinfecting bathrooms, replacing linens, towels, and amenities; according to standards established by the Housekeeping Manager.
  • To satisfactorily meet the performance and production standards established by the hotel from time to time, including, but not limited to completing the assigned number of rooms in accordance with the quality standards set by the department. Correctly document room status and linen usage on maid sheet.
